Rose & Mulberry Granola

I love granola! It's one of those healthy but simple things to make that lasts a while - but sometimes its quite nice to mix up the flavours a little and try something new. I love mulberries and tried mixing them with some almonds, pistachios and rose petals - Not only does it look beautiful, it tastes it  too!! you have got to try this .... Delicious!!!

Ingredients

  • 2 cups jumbo oats

  • 1/2 cup almonds chopped

  • 1/2 cup pistachios chopped

  • 1 cup mulberries

  • 1/4 cup pure maple syrup

  • 1 heaped tablespoon coconut oil

  • 1/4 cup rose petals

  • 1 vanilla pod - seeds scraped out

  • 1/2 teaspoon cinnamon

  • pinch of salt

Method

Pre heat oven to 160 degrees. Mix the maple syrup, coconut oil, vanilla seeds, cinnamon & salt together. If the coconut oil is solid you can put all the ingredients in a pan and warm in over a low heat until the coconut oil has melted.

Put the oats and  nuts in a oven proof dish and empty the above liquid ingredients over this and mix. Put in the oven for approximately half an hour - taking it out every 7-10 mins to mix the ingredients so the top layer does not burn.

Wait till it has completely cooled to add the mulberries and rose petals.

Notes: Vanilla pods can be very expensive to buy individually. I always buy mine in bulk from www.gourmetvanilla.co.uk. You get 25-30 pods for £10
