Immunity Boosting Popcorn
Popcorn is one of the healthiest snacks you can offer a kid - it rivals blueberries in its antioxidant status. Research shows that one serving contains up to 300 mg of antioxidants compared to a serving of fruit which contain approximately 160mg. Add some dark chocolate and your snack is getting tastier and healthier. Dark chocolate not only has antioxidant status but is loaded with minerals: Iron, magnesium, copper, manganese, zinc, selenium and more ... It is also great for your skin, good brain function, raises your good cholesterol, and soo much more. Whenever I make a batch I love to sprinkle it with chopped cranberries as it make it taste like a 'fruit & nut' chocolate. Recently I've also been adding chopped pumpkin seeds because of their zinc content and letting them set over the drying chocolate. Being winter Im trying to get as much zinc into my children as possible as it is important for good immunity (and helps with mood and sleep with children - always good too!!!)
Ingredients:
1/2 cup popcorn
50g dark chocolate (I use 70% dark chocolate)
1 tbs chopped cranberries
1 tbs chopped pumpkin seeds
1. Pop the popcorn and let it cool completely
2. Melt the chocolate and put it in a piping bag (I use disposable piping bags or just use a plastic snack bag which I cut a hole in
3. Drizzle the chocolate over the popcorn
4. Sprinkle the cranberries and pumpkin seeds over. Wait for it to set.
As the chocolate dries the popcorn sets in clusters ... which means you get more in each mouthful!!!
