Tahini Chocolate Chip Cookies

These are guilt free, gluten free morsels of deliciousness ... I don't know how else to describe them. Every time I make a batch they are gone within minutes that I've doubled the recipe and make more now!

The base of this cookie - egg, almonds and tahini are all great protein sources. The  almond and tahini are also great sources of calcium for growing kids. This batch of approximately 14 mini cookies actually has more calcium in it than a 8oz glass of milk.

Recipe:

  • 100g pack of ground almonds

  • 1 egg

  • 1/2 cup coconut sugar

  • 1 heaped tablespoon of tahini

  • 1 vanilla pod - seeds scraped out

  • 1/2 tsp baking powder

  • 80 percent dark chocolate chopped up into little pieces - as little or as much as you like.

Mix everything up and make into small rounds balls that you can flatten with a fork.

Makes approximately 12-14 mini cookies.

Bake for 15 minutes on 180 degrees until golden on top.

You don't need to use the vanilla - i love the freckles you get in the mixture because of it. I buy all my vanilla pods from gourmet vanilla - you get about 30 pods for £13.00 ...
