Banana Bread
This is my go to when I need guilt free cake. Its full of nourishing ingredients that won't cause any dips in energy like normal cakes and it will fill you up and keep you going. No refined sugars and no refined carbohydrates. Lots of protein, good fats and fibre. It really is lovely and I've been making it for years now and still love it. I usually make it in muffin cases as I get to eat them sooner because they are done in half the amount of time but also because you get a much nicer cake like consistency. It also tastes amazing as a loaf - you would just keep it in the oven for longer.
Ingredients:
2 cups ripe mashed bananas
2 eggs beaten
1/2 cup apple puree
1/4 cup maple syrup
1 cup pecans or walnuts roughly chopped
3/4 cup almond flour
3/4 cup oat flour (oats whizzed in a blender until you get a flour)
1/2 cup gluten free flour (I use Doves organic GF flour)
1/4 cup melted butter or coconut oil
1/2 tsp ground cinnamon
1/2 tsp mixed spice
1/8 tsp nutmegpinch of salt
1 tsp baking powder
Method
Preheat the oven to 180 degrees.
Mix the wet ingredients (eggs, applesauce, bananas, maple syrup and coconut oil (or butter)) together.
Add the dry ingredients (almond flour, oat flour, GF flour, baking powder spices and nuts) and mix well.
Spoon into muffin cases and put in the oven for 20-25 minutes - until golden brown and when they spring back nicely. If you're going to make a loaf let it bake in the oven for 45-50 minutes until golden brown and set in the middle. Timing will vary depending on individual ovens and these are just guidelines.
