Protein Rich Granola: 3 Ways

SUPERFOOD-OMEGA3-PROTEIN RICH-GRANOLA 3 ways:

Just made a batch of granola for the week. I've used lots of seeds and nuts to increase the protein and fat content. This will make it more filling which will keep me fuller for longer and prevent my blood sugar going on a roller coaster ride.

It's a big batch but you could always half it:

  • 2 cups oats

  • 1 cup seed mix (pumpkin, sesame, sunflower and flax)

  • 1 cup pecans

  • 1 cup almonds roughly chopped

  • 1/2 cup hemp seeds

  • 1/2 cup buckwheat groats

Mix the above with 1/2 a cup of maple syrup and 2 tablespoons of melted coconut oil. Add 1/2 -1 tsp of ground cinnamon and one scraped vanilla pod and bake in a preheated oven (160 degrees) for 15/20 minutes ... Make sure it is spread out in a thin layer. When its done it should move around freely in the baking dish without sticking and be golden brown in colour.

You can play around with favours - add some cacao powder to make it into chocolate granolas or some greens powder to increase the nutritional content. It taste really good just to munch on for a snack too ...
