Hazelnut & Chocolate Cookies (aka Nutella Cookies)
HAZELNUT & CHOCOLATE COOKIES (aka Nutella Cookies!) I was walking down the aisle of the grocery store this morning and spotted some ground hazelnuts and decided to be a little creative - hazelnuts and chocolate are without doubt a deadly combination and my favourite. I've made these for a Friday afternoon treat for my boys - only problem is I hope they last till they come home from school!!! They are guilt free, full of protein (keeping their blood sugar stable) good and healthy fats from the eggs and hazelnuts, antioxidants from the cacao, has no refined sugar (just gut loving maple syrup) and are gluten free.
Ingredients
2 tablespoons butter
3 tablespoons real maple syrup
1 egg
1 cup ground hazelnuts
1 heaped tablespoon cacao
1/2 tsp baking powder
30g 70%dark chocolate chopped(About 3 rows of green and blacks)
Preheat the oven to 180 degrees.
Mix the butter and maple syrup together until combined. Add the egg and beat it.
To this add the ground hazelnuts, cacao powder, baking powder and chopped chocolate.
Mix
Makes 6 generous sized cookies.
Spoon onto a baking dish and put in the oven for 10-20 minutes until firm on the top with some give in the middle.
If your using cocoa powder you will need a little more as it's not as strong as cacao- increase to 2 tablespoons Try it and tell me what you think ....
