Chocolate Baobab Truffles
You don't need an excuse Like Valentines Day to make these - but its a great reason! It's one of the simplest things to make and tastes great but the best thing is you can share them with your kids and not feel any guilty about what you're giving them. All the ingredients are super foods and are great for them! It takes literally 5 minutes to make and has only 4 ingredients
The baobab in this make the truffles taste fruity ... Anyone who has tasted raspberry chocolate Gu - its got similar taste. Baobab is an African seed and anyone from the region will know about it. In places like East Africa the seed with the baobab powder are rolled in chilli and coloured red. The fruity but spicy concoction is a favourite of anyone who lives there. Coming from that region I am always requesting travellers to please bring some back for me. Now the powder is extracted from the seeds, exported and sold as a powder which you can use to sweeten desserts and smoothies naturally. Baobab is a great source of Vitamin C, calcium, potassium, B6, magnesium, fibre and more ... but best of all is the fact that it tastes like sherbet.
Recipe
4 tablespoons coconut oil
4 tablespoons cacao powder
2 tablespoon baobab
2 tablespoon maple syrup.
Melt the coconut oil in a pan and add it to a bowl with all the other ingredients and mix well. You can either put this in the fridge so that it starts to solidify slightly otherwise it tastes about 2 hours if you leave it on the kitchen counter. When hardened slightly, roll them into bite size truffles and put them in the fridge for a few minuites to set further. These ingredients make 8-10 truffles but you can easily double the recipe to make more or half it for less.
You can then roll them into some cacao powder, baobab powder or something red to make it more festive like beetroot powder or a berry superfood powder.
