Liver/ Detox Coleslaw

This is a super example of how Food is Medicne and how different ingredient that you put together can help support you. The cabbage and kale are part of the cruciferous family of vegetables and they are key for a healthy liver and your detoxification pathways. They help support the removal of toxins and unwanted hormones from your body. The dressing is great for your gut and digestion. The miso is a fermented food which means its  a probiotic and helps to keep your gut balanced. Hippocrates once said 'All Disease Begins in the Gut' and if we can keep the gut healthy by eating probiotic rich food we are a step closer to this.The dressing is sweetened with a little maple syrup - maple syrup is a prebiotic, meaning it feeds the good bacteria already residing in your gut helping it to stay happy and healthy. In the dressing is apple cider vinegar and lemon, again are liver supporting foods but also support the breakdown and digestion of food. The rind of lemons contains limonene which is supports both step of liver detoxiftion - 1 and 2 too so I always put a little in.

Ingredient

  • 1 teaspoon unpasteurised fermented miso

  • 1 tablespoon apple cider vinegar

  • 1 tablespoon real maple syrup

  • 1 tablespoon sesame oil

  • 1/4 red cabbage finely chopped

  • 1/4 white cabbage finely chopped

  • 1/2 carrot grated

  • 1-2 large leave of kales finely sliced

You can vary the amount of vegetables spending on what you like in your coleslaw.

Mix all the vegetables up.

whisk the dressing ingredients or shake them together in a jar.

Combine the two.

I like to add some raisin to this - but its optional.
