Quick Kulfi

This really is a 5 minute kulfi recipe (minus the freezing time) and it's both dairy and sugar free AND contains ingredients that are all really good for you.

You can freeze it in individual containers, in an ice cream box or as  ice lollies. I love the latter because then I can dip them in dark chocolate and sprinkle any topping on them!

RECIPE

  • 6 Medjool dates (pip removed)

  • pinch of saffron

  • seeds of 2 cardamon pods

  • 1 cup ground almonds

  • 1 cup coconut milk

Just whizz everything together in a high speed blender and spoon it in your container. Freeze overnight. It’s that easy!

Optional: Can dip in some melted chocolate and decorate with anything you like (nuts, seeds, chocolate - anything!) I've dipped one in chopped pistachio and rose petals and the other in flaked almonds.
