Creamy Oat & Chia Porridge

This is my current favourite breakfast ... The coconut manna makes it very creamy and rich that you won't notice that there's no added milk - the blueberries and cocoa nibs are full of antioxidants and the oats make it a fuelling and filling start to the day!

It's both gluten and dairy free which is an added bonus ..

My Recipe:

3 tablespoons oats

1 tablespoon chia seeds

1 tablespoon coconut manna

1/2 teaspoon ground cinnamon

3 tablespoons (a handful) of blueberries

1 cup just boiled water

1 tablespoon chopped almonds

1 teaspoon cocoa nib

Place the oats, chia seeds, coconut manna, cinnamon and blueberries in a bowl. Cover with the water. Put a plate on top of the bowl and leave covered for about 15 minutes.

After 15 minutes, lift the plate and whisk the ingredients up with a fork making sure that the coconut manna is well mixed. Top with the chopped almonds and cocoa nib ...

NOTE: Coconut is a really really good fat. Know is a medium chain triglyceride (MCT) - when you eat it doesn't need to be converted and gives you instant energy-  giving you a good kick start to the day ... The blueberries & cocoa have great antioxidant power... oats will keep you full and chia seeds are a great source of omega 3 ... This is a great start to the day - filling and nutritious...
