Banana & Pear Bread
SO, this is a recipe I play around a lot with as I am always making banana bread! Always buying an abundance of bananas in hope that some don't get eaten, go over ripe and I can use them from banana bread! I also find that the best recipes evolve from not having the correct ingredients and having to find an alternative and that is exactly what happened here. I didn't have enough bananas but I had a couple of very ripe pears sitting on the counter that were screaming to me to use them - so I did and what resulted was delicious!
The pears add moisture to the bread and pears themselves contain something called pectin which is great for your gut too.This bread also has no added sugars, it doesn't need it. the pears and bananas are enough! It full of protein (eggs, walnuts) and omega 3 (walnuts) lots of MCT oil which is great for some energy or a pick me up in the afternoon (or anytime really)
Ingredients -
2 large rip bananas mashed
2 ripe pears mashed
1/2 cup melted coconut oil
2 vanilla pods of 1/2 tsp of vanilla bean paste
1 cup ground walnuts
1 cup ground oats or oat flour
2 tbs gluten free flour
1 tsp baking powder
2 large eggs whisked
1 tsp cinnamon
1 tsp mixed spice
Put the wet ingredients into a bowl (eggs, bananas, pears, coconut oil) and mix in the dry ingredients (walnuts, oats, gf flour, baking powder, spices and vanilla)
Add to a loaf tin.
Bake for about 30 minutes in a pre heated open.
Let it cool completely before enjoying!
