Healthy Waffles
Morning Waffles
Who doesn't like waffles? The problem is waffles aren't considered a healthy breakfast because of the refined flour, lack of protein and goodness BUT we can change that!! I use to find myself stopping my kids from eating the foods that they wanted to - so instead of saying no - I decided to change them into something that tastes the same but was way more healthy and nutritious - so that they are happy and so am I!!
✭ I add lots more eggs - This is a perfect and important protein for kids. It has everything need to help them grow their bodies and brains.
✭ I add a banana - some fruit and fibre with the added natural sweetness. Plus my middle child won't go near one so it's my way of getting it in!
✭I swap out the refined white flour for whole oats which I blend into a flour (or you can buy ready made oat flour) to give them slow and sustained release of energy. I also add almond flour as it's protein rich with some added good fats.
You want the protein in their breakfast to keep their blood sugar stable until lunch time so that they can concentrate well and learn in school. If they don't get enough protein in their breakfast they will have a sugar crash during the morning and find it difficult concentrating during school which no parent or teacher wants. Even if it's on the weekend - the steady sugar levels mean a calmer and happier child.
Ingredients
3 eggs
1 banana
1.5 cups of flour (1 cup oat flour, 1/4 cup almond flour, 1/4 cup self raising GF flour)
1 tsp of baking powder
1 tablespoon olive oil or melted butter
1/2 cup water
Separate the egg yolk and egg white.
Whisk or blend the egg white until light and fluffy and then add it into the bowl with the yolk.
Blend the banana, olive oil, water, flour mixture and baking powder and add it to the eggs.
Mix everything together and transfer to a waffle pan.
Make 6-8 waffles.
Top with nut butter, yoghurt, fruit ...
By adding the extra eggs and whisking the egg whites actually make the waffles lighter - soft on the inside and crispy on the outside.
For extra crispiness you can pop them in the toaster for 30 seconds ...
