A Mushroom Immune Boost
Medicinal mushrooms such as Shitake and Reishi have been used in Asian Medicine for over 6,000 years with their health benefits being recognised and documented - primarily that of immune support by fighting disease and infection. Mushrooms contain beta glucans which stimulate the entire immune system and activate it inducing it to search for viruses, bacteria and anything that should not be there. They also contain fibre, vitamins, minerals and protein.
I take a cup of dried mixed mushrooms - half of the amount is usually shikate mushrooms and I leave them to soak in a cup and a half of water for 30-60 minutes to rehydrate. I then blitz them in a food processor or blender till they are a thick liquid with small bits. If you like the smell of mushrooms you will love this as it permeates the whole room... and if you're kids don't like mushrooms don't do this when they are around. I have to sneakily do mine while they are out of the kitchen or at school. I then add this to my bolognese sauce or lasagne or anything else that may seem appropriate. It gives it a real depth of flavour and revolutionises the taste - when i make lasagne it honestly does not taste the same without it. If I am not making a sauce I may just chop up fresh shiitake mushrooms and add it to my food - like a stir fry, salad, eggs or finely chopped inside dumplings....
