Kale Pesto

I really like this recipe because its very detoxing. The coriander and the parsley help remove any toxins lurking throughout your body and the raw garlic helps the liver in removing them. Kale is full of benefits (Vitamin C, K, A, Calcium, iron ...) and the mint lifts the recipe and stops it tasting 'too green'. I have this drizzled over most of my salads and the kids will have it stirred into a pasta or in a sandwich for a quick snack. You can also freeze it. I fill up ice cube trays with this -each cube gives you one good serving.

I find this a really easy way to sneak kale into my kids food. They love pesto and it goes undetected in here. I haven't put parmesan cheese in the recipe as I prefer to have it without it - and for the kids I usually just grate it over whatever it is that they are having it with. You can mix it into the pesto if you prefer.

Ingredients:

  • 2 large handfuls of kale

  • 3 spigs of parsley

  • 3 sprigs of corriander

  • 8-10 mint leaves

  • 1/2 a squeezed lemon

  • 1 crushed garlic clove

  • 100ml olive oil

  • 3 tablespoons pine nuts

  • salt to taste

Pulse all the ingredients together in a high speed blender for a few seconds ... or if you have a large enough mortar and pestle you can bash away.
